I really try my best to pack our lunches for work the night before. Otherwise Mike and I will both end up eating some crap food and spend unnecessary money. Here’s today’s lunch: very simple & colorful!
My Mexican Salad w/ Rotissere Mojo Chicken

Ingredients:

  • Romaine Lettuce & Baby Spinach (all I had in the fridge)
  • Rotissere Mojo Chicken from Publix
  • Black Beans (rinsed)
  • Mexi Can Corn
  • cilantro
  • Cherry tomato
  • Dressing: Minced Garlic, Olive Oil, Fresh Squeezed Lime Juice, Salt & Pep

 Even if you have an office job where you’re stuck at a desk all day you can still eat healthy. The hardest part is remembering to prepare it the night before.
